Lamb Meatloaf with Parmesan Risotto and Roasted veggies

### Michelin 3-Star Lamb Meatloaf

#### Ingredients:
- 1 lb ground lamb
- 1/2 cup breadcrumbs
- 1/4 cup finely chopped onion
- 2 cloves garlic, minced
- 1/4 cup finely chopped fresh parsley
- 1/4 cup finely chopped fresh mint
- 1/4 cup finely grated Parmesan cheese
- 1 large egg, beaten
- 2 tablespoons tomato paste
- 1 tablespoon Worcestershire sauce
- 1 teaspoon Dijon mustard
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
- Olive oil for greasing

#### Glaze:
- 1/4 cup balsamic vinegar
- 2 tablespoons honey
- 1 tablespoon Dijon mustard

#### Instructions:
1. Preheat your oven to 375°F (190°C). Grease a loaf pan with olive oil and set aside.

2. In a large mixing bowl, combine the ground lamb, breadcrumbs, chopped onion, minced garlic, chopped parsley, chopped mint, grated Parmesan cheese, beaten egg, tomato paste, Worcestershire sauce, Dijon mustard, dried oregano, salt, and black pepper. Use your hands to mix until all ingredients are well combined.

3. Transfer the mixture into the prepared loaf pan and press it down evenly.

4. In a small bowl, whisk together the balsamic vinegar, honey, and Dijon mustard to make the glaze.

5. Brush the glaze evenly over the top of the meatloaf.

6. Place the loaf pan in the preheated oven and bake for 45-50 minutes, or until the meatloaf is cooked through and the top is nicely browned.

7. Remove the meatloaf from the oven and let it rest for 5-10 minutes before slicing.

8. Serve the Michelin 5-Star Lamb Meatloaf slices with your choice of sides, such as roasted vegetables or mashed potatoes.
